Italian cake recipe


*Ingredients
   
°500g Mascarpone cheese
°Sufficient pure cocoa
°24-30 Italian ladyfingers
°3 cups strong chilled coffee
°3 tablespoons dark rum
°2 egg yolks
°2 egg whites
°1/2 cup sugar

*Preparation
 
Mixing coffee & rum together
   In bowl, beating egg whites to stiff with an electric mixer.   Mixing egg yolks in other bowl, with sugar and mascarpone until homogeneous. Gently fold the egg whites into this mixture
   In bottom of  9 inch springform pan, sprinkling cocoa to covering bottom using a small sieve
   Quickly dip ladyfingers one at  time into coffee mixture & arrange in bottom of the mold to covering it
   Then spreading 1/3 of the cheese filling, sprinkling again with cocoa & redo the same 2 other layers with soaked biscuits, cheese & cocoa
   Chill and serving
