Southern Fried Salmon Patties




* Ingredients:

° 4 Potatoes peeled and cut into cubes
° 450 g (1 lb) salmon slices, skin removal
° 30ml (2 tbsp) fresh parsley, chopped
° 2 Green onion, chopped
° 80 ml (1/3 cup) breadcrumbs
+ Optional:
° 30 ml (2 tbsp) fresh perennial garlic, chopped

* Methods 

Put the potatoes in a saucepan and cover with cold water. salt. Bring to a boil, then cook for 18 to 20 minutes until cooked. Drain and puree. Let it be quiet.
While cooking potatoes, preheat the oven to 205 ° C (400 ° F).
Place the salmon fillet on a baking tray lined with parchment paper. Salt and pepper. Bake for 15 to 20 minutes. Let it cool, then the salmon collapsed.
In a bowl, mix the mashed potatoes with the peeled salmon, parsley, green onions, breadcrumbs and chives if desired. Salt and pepper.
Eight pancakes are 2 cm (3/4 inches) thick, using about 125 ml (1/2 cup) of preparation for each cup.
In a frying pan, heat a little olive oil over medium heat. Cook the pancakes for 3 to 4 minutes on each side. Place on a towel sheet to remove excess oil.
